This seasonal microgreen salad is a great way to highlight summer produce while enjoying healthy greens that can grow year around. With fresh microgreens mix, blueberries and sunflower seeds, you’ll fall in love with microgreens as your new salad go to.
INGREDIENTS
Salad
1 package micro mix (broccoli, rapini, radish, mustard & arugula)
1/2 cup fresh blueberries
2 tablespoons seed mix (sunflower, pumpkin)
1 ear roasted corn, cut off the cob
2 cups leafy green lettuce, finely chopped
2 french breakfast radish, thinly sliced
Dressing
2 tablespoons extra virgin olive oil
1 tablespoon white wine vinegar
1 clove of garlic, minced
1 tablespoon capers, chopped
1 tablespoon finely chopped fresh mint
sea salt
black pepper
INSTRUCTIONS
Rinse and dry microgreens. Set aside.
In a small mixing bowl combine olive oil, white wine vinegar, mint, garlic, chopped caper and a pinch of salt and pepper.
Rinse, dry and finely chop leafy lettuce.
Using a serrated knife cut the kernels of roasted corn off the cob.
Assemble the salad by combining microgreens, lettuce, corn, blueberries and seeds in a large bowl. Add salad dressing. Toss well and serve immediately!
